How To Make Moist Apple Crumble Coffee Cake

Letโ€™s Cook: Moist Apple Crumble Coffee Cake
Mix Dry Ingredients
In a medium bowl, combine the flour, salt, baking soda, and baking powder. Give it a quick whisk to make sure everything is evenly distributed. Set this bowl aside for now.
Prepare the Crumble
In another bowl, mix together the chopped toasted walnuts, both kinds of sugar, a pinch of salt, cinnamon, and the melted butter. Stir until all the walnuts are coated and the mixture looks crumbly. Put this aside for later.
Cream Butter and Sugar
In a large bowl, cream the softened unsalted butter and granulated sugar together. Beat them until the mixture becomes light and fluffy. This usually takes about three minutes.
Chef Thomasโ€™s Tip: This step adds air to your batter, which gives the cake a tender crumb. Don’t rush it.
Add Eggs and Vanilla
Mix in the large eggs one at a time, making sure each is fully combined before adding the next. Then stir in the vanilla extract until it’s well incorporated into the mixture.
Stir in Yogurt
Add the plain yogurt to the wet ingredients. Mix it in until it’s just combined. The yogurt adds moisture and a nice subtle tang to the cake.
Combine Wet and Dry
Gently fold the dry flour mixture into the wet ingredients using a spatula. Mix until just combined, being careful not to overmix; the batter will be quite thick.
Finally, fold the diced apples into the batter until they are evenly distributed. Chef Thomasโ€™s Tip: Overmixing can lead to a tough cake. Stop as soon as you no longer see dry streaks of flour.
First Batter Layer
Spread half of the cake batter evenly into a greased and parchment-lined 9×13 inch baking pan. Use an offset spatula or the back of a spoon to spread it out smoothly.
First Crumble Layer
Sprinkle half of the prepared crumble mixture evenly over the first layer of batter in the pan. Try to get an even distribution for every bite.
Finish Layers
Carefully spread the remaining cake batter over the crumble layer. It might be a bit tricky, but take your time. Then, top with the rest of the crumble mixture, making sure itโ€™s spread across the top.
Bake and Cool
Bake the cake in a preheated 350-degree oven for about 40 minutes, or until a wooden toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 30 minutes before you slice and serve it. This helps it set properly.

Advice From Chet Thomas

Always use softened butter for creaming. If it’s too cold, it won’t incorporate enough air.
Do not overmix the batter once you add the flour. Just mix until combined to keep the cake tender.
Honeycrisp apples hold their shape well during baking, but firm Gala or Fuji apples also work nicely.
Toasted walnuts add a deeper flavor to the crumble. You can quickly toast them in a dry skillet over medium heat.
Allow the cake to cool for the recommended time before slicing. It helps the cake structure set and prevents crumbling.

How I Serve Moist Apple Crumble Coffee Cake

This cake is wonderfully versatile. I often serve it warm for breakfast or brunch with a simple cup of coffee or tea. It also makes a lovely, unfussy dessert after a family meal.

For those looking to elevate their dessert experience, learning about coffee and dessert pairings can enhance the flavors of both.

Sometimes Iโ€™ll add a small scoop of vanilla bean ice cream or a dollop of fresh whipped cream, but honestly, itโ€™s perfect just as it is. The warm apples and cinnamon crumble don’t need much else. It’s a comforting treat any time of day.

The Simple Joy of Baking with Kids

I remember standing next to my grandmother, a sturdy wooden spoon in my small hand, helping her stir batter. Those early kitchen memories are what made me the chef I am today.

Baking this Moist Apple Crumble Coffee Cake brings me back to that feelingโ€”much like the simple, timeless joy of making my Easy Moist Banana Bread. It’s a recipe simple enough that even young hands can help. My own grandkids love to peel the apples or carefully sprinkle the crumble topping.

Thereโ€™s a certain magic in watching them learn by doing, and it doesn’t have to be perfect. The most important ingredient, as Chef Thomas always says, is shared time and curiosity. If you are looking for another elegant but straightforward bake to share with family, you might also enjoy my Gluten-Free French Butter Cake. The kitchen is a wonderful classroom, and a warm slice of this cake is a delicious lesson in simple pleasures.

Variations for Moist Apple Crumble Coffee Cake

One of the joys of home baking is making a recipe your own. For this coffee cake, you could swap out the apples for pears, or even a mix of berries when theyโ€™re in season a versatility I also love exploring with my Taiyaki fillings.

If you don’t have walnuts, pecans or even almonds would be a fine substitute in the crumble. For another bite-sized treat that packs a lot of crunch, you should try my Churro Donut Bites. A little orange zest added to the batter would brighten the flavor nicely.

You can also play with the spices; a pinch of nutmeg or allspice could join the cinnamon for a different warmth. Chef Thomas encourages you to experiment with what you have in your pantry to make this cake uniquely yours.

Storage & Make-Ahead

This coffee cake holds up well. You can store any leftovers in an airtight container at room temperature for up to three days, much like the lasting freshness of my Pink Velvet Cupcakes.

If you want to make it ahead, you can bake the entire cake, let it cool completely, then wrap it tightly in plastic wrap and foil. It freezes well for up to a month. For those who prefer a dedicated gluten-free option with a similar profile, you might also like my Gluten-Free Cinnamon Coffee Cake.

Just thaw it overnight in the refrigerator, then warm gently in the oven before serving. The crumble might lose a tiny bit of its crispness, but the flavor will still be excellent.

FAQ About Moist Apple Crumble Coffee Cake

Can I use different apples?

Yes, firm apples like Gala, Fuji, or Granny Smith work well. Avoid very soft apples that might turn to mush.

How do I know if the butter is softened enough?

It should yield easily when you press it with your finger, but it shouldn’t be melted or greasy. Room temperature is key.

Can I skip the walnuts in the crumble?

Absolutely. The crumble will still be delicious without the nuts. You could also substitute with pecans or almonds.

Why is my coffee cake dry?

A dry cake often comes from overmixing the batter once the flour is added or baking it for too long. Make sure to mix only until just combined.

Can I add a glaze to this coffee cake?

A simple powdered sugar glaze would be a nice touch. Just mix powdered sugar with a little milk and a drop of vanilla extract until it’s drizzly.

Is parchment paper necessary for baking?

It helps prevent sticking and makes lifting the cake out of the pan much easier. If you don’t have it, greasing and flouring your pan thoroughly can also work.
