  • 2 large eggs
  • 2 tsp vanilla extract

  • 1 cup chopped salted pistachios
  • ½ cup white chocolate chips

  2. Line 2 baking sheets with parchment paper. Set aside

Take two baking sheets and line them with parchment paper. This helps prevent sticking and makes cleanup much easier. Set these aside for now.
Combine Dry Ingredients
In a medium bowl, whisk together the flour, baking soda, and salt. Whisking makes sure these dry ingredients are evenly distributed throughout the dough. Put this bowl to the side.
Cream Butter and Sugars
In a large bowl, use a handheld mixer to beat together the melted butter, brown sugar, and granulated sugar. Beat until they are light and fluffy, usually a couple of minutes. This step creates the base of your cookie dough.
Add Eggs and Vanilla
Beat in the eggs one at a time, making sure to beat well after each addition. Then, beat in the vanilla extract. This ensures everything is fully combined and gives your cookies good flavor.
Mix in Flour Mixture
Slowly add the flour mixture into the butter mixture. Mix just until everything is combined. Be careful not to overmix, as that can make your cookies tough.

Chef Thomas’s Tip: As soon as you see no dry flour left, stop mixing.
